
The Sun-Dried Tomato Dip is so creamy and yummy! Its a nice change from your usual clam dip or onion dip. I love eating this with pita chips but it is delicious with tortilla chips too. I even used it as a sandwich spread when making a turkey panini sandwich. It gave it a wonderful flavor.
Sigh! Did I ever mention that I LOVE food! Oh well, they don’t call me “Kitchen Mama” for nothing.
Tip: Depending on the sun-dried tomatoes that you use, adjust the salt to your taste. Some brands may be saltier than others.

[…] I enjoyed thinking of variations for that oh so ono sandwich. I made some with turkey, pesto, cheese, tomato, cheese, basalmic vinegar … did I mention cheese??? I also made pastrami and swiss cheese paninis with a touch of mayo and whole grain mustard. I even got ambitious and grilled veggies like red and yellow peppers, onions, eggplant and mushrooms and topped it with Provolone cheese and even made some garlic aioli.
