Turkey Rice Soup

Turkey Rice Soup, also known as Jook or Chuk is a great dish to make to use those leftover turkey bones from Thanksgiving dinner. I had them bagged in my freezer and decided to make a pot of soup. My husband and daughter got hold of the ‘cold bug’ or ‘flu bug’ and I thought a nice bowl of hot rice soup might do their body good. It did and they enjoyed it. I must admit that I sometimes look forward to the Jook more than the turkey !

In addition to the basic turkey rice soup that uses onions, celery and rice, I add chopped water chestnuts, bits of shiitake mushrooms and long rice noodles cut into 1 inch lengths. Condiments also really add to the flavor of the soup. I love to add chinese parsley and chopped rakkyo (pickled scallions). My husband also likes to add chopped Manoa lettuce and green onions.

Any way you have it, a bowl of hot soup to soothe your soul is very warming on any day.

    Wow! That looks delicious! I always look forward to the jook after Thanksgiving and can’t wait to try your version of this traditional “comfort food.” Great photo!
