Lollipop Cookies

Aren’t these cute! I haven’t made these Lollipop Cookies in years, but I decided to surprise my friends with this special treat for Girl’s Day. I originally got this recipe from my sister-in-law, Audrey, who converted this yummy cookie into a cookie on a stick. They are crispy, buttery and stays on the stick till the very last bite!

As I started to bake these, I thought I’d show a picture of what it looks like before they go into the oven. They start small, requiring you to place the M&M candies very close together to form the eyes and smile.

Then I place eight cookies on the cookie sheet so that it will give them lots of space to spread to a giant ‘face’. It’s amazing, but these popsicle sticks, which I found at the craft store, do not burn.

After they bake, you need to remove them very quickly and carefully to a cookie rack to let them cool and crisp. They take a little bit of work, but it well worth the smiles that it brings to those get them!

Seeking help : Does anyone know of a process to prevent the M&Ms from cracking during baking? If I lower the heat, the cookie will not get as crispy. I would appreciate any suggestions that anyone may have tried.

    I really don’t think it matters at all that the M&Ms crack…..these cookies were soooooo ono - cracked M&Ms and all!!! I asked Devynn to share these with a couple of her friends but she said “no way”!!
