
My Aunty Kimi is my mentor when it comes to cooking and baking. Growing up and till this day, I learn a lot from her. I remember cooking with her in her kitchen and learning all her techniques and ono recipes. Many of my recipe cards are dishes that she has taught me.
At one of our family potlucks, she made Seafood Casserole ( I think it was originally from a Hilo Cookbook) and I loved it! I’ve modified it a little by using imitation crab (cheaper than the canned crab) and the pre-cooked, shelled shrimp from Costco (instead of the teeny weeny shrimp in the can). This gives this casserole a lot more texture and makes it quite tasty.
