
This is another comfort food of mine that my family enjoys. I don’t have a recipe card nor an actual recipe, but let me give it a try.
Corned Beef Hash
3 medium potatoes (peeled, cut in 1 inch cubes)
1 can corned beef
1 small onion, chopped
1 egg
Steam or boil the potatoes till soft. Remove/drain carefully from the hot pot and put into a large bowl. Mash the potatoes to your liking. ( I like little chunks of potatoes in my hash patty). In a frying pan, cook the corned beef and onions till the onions are tender. Pour into the mashed potatoes and mix. Season with salt and pepper to taste. While still hot, add the raw egg and stir well. (The egg will bind the patty and not fall apart when you fry it.)
Form into balls, and coat in panko (Japanese bread crumbs), flatten to a patty and fry till brown and crispy on the outside.

Eat with fried egg placed on top of the corned beef hash patty. (my son likes the egg on his rice ..to each his own.) Breakfast, lunch or dinner … it’s always yummy!
Tip: I had leftover fresh corned beef (from St Patrick’s Day) that I had frozen. This time I used my leftovers, instead of the canned corned beef. I also make these patties when I have leftover mashed potatoes.

Just reading your description makes my mouth water. I just love corned beef hash, especially those chunks of potato. You’ve described a new twist in making the patties. I’ve got to try it with the panko! Yum! Yum!
