
I always convince myself that “a cook never has enough cookbooks”. That’s my rationalization for the ‘ukupaila’ (my hawaiian word for lots and lots) cookbooks that I own. Where ever I travel, even just a stop over at an airport in a different state, I will look for the local cookbook there and indulge myself in yet another cookbook. I guess you could call me a cookbook ‘addict’.
Now I’ve found myself indulging in another avenue to learn new recipes. My cousin Janet and I are also ‘addicted’ to attending cooking classes at the Kapiolani Community College. We started a year ago and we love them. Each class begins with a lecture, followed by a cooking demonstration and then hands-on cooking! The best part is that we have meals or baked goods to take home to share with our families. These classes are geared to the home cook, although there are some beginning chefs attending some of the classes.
This past weekend we attended the Cookies class, taught by Chef Mark Silva of the Kahala Hotel & Resort Hotel. We were divided into small groups and each group made a different cookie. Then we all shared in the cookie bakery at the end.

Check out the HUGE mixer that we used !! Chef Silva was a lot of fun ! All the cookies were really yummy!

This is KCC’s commercial oven in the baking laboratory. It was so amazing. The whole shelf of cookies would rotate in the oven for even baking!

Now, this really seemed like a cookie factory! Needless to say, we all left happy!

we did have a lot of fun … sometimes food just ‘looks good’ but these were actually very good!
