
I love eating and making ‘tsukemono’ (Japanese pickled vegetables) and side dishes like this. Hasu Kinpira (Lotus Root) is like the ‘gobo’ (burdock root) kinpira, without all the work of slicing really thin strips. I like the added crunch that the hasu gives. It’s a great side dish at room temperature or cold.

I love tsukemono, too! As a japanese person raised on rice, I can appreciate the taste of a well pickled batch of tsukemono.

My husband and I really enjoy tsukemono …even when we were much younger and first got married. I always said that if you opened our refrig, you would think an elderly Japanese couple lived here…now we ARE that older Japanese couple ..haha!
