I love eating and making ‘tsukemono’ (Japanese pickled vegetables) and side dishes like this. Hasu Kinpira (Lotus Root) is like the ‘gobo’ (burdock root) kinpira, without all the work of slicing really thin strips. I like the added crunch that the hasu gives.
